Say hello to our new new Head Chef Vincent Mahon!
A Sligo native Vincent comes with years of great experience from working in the 4 star Glasshouse Hotel in Sligo, to more recently as the Head Chef of the historic Rockhill House Estate in Letterkenny. Vincent has some exciting plans up his sleeve for Beech Hill, and is about to introduce a whole new menu to the famous fine dining Ardmore Restaurant. Happy to hit the ground running Vincent is hosting his first event this Friday with a delicious Muff Gin Six Course Tasting Dinner (call to reserve yourself a seat now!)Each course will be paired with six delicious Muff Gin cocktails, using garnishes from Beech Hill’s very own walled garden, one of the things that drew Vincent to Beech Hill. ‘To have a Walled Garden with so many fresh fruit and vegetables to choose from is fantastic, it means we can have some fun by creating our own menus seasonally.’
Whether its fun dining in Sixteen22 Gastro Pub or fine dining in the Ardmore Restaurant, Vincent and the team at Beech Hill have something delicious for everyone!
