Walled Garden & Food Heritage
Thought to be one of the oldest walled gardens in the country, for many years it lay idle and overgrown until the discovery of an old cook book. The historic recipe book belonged to Mrs Skipton a previous owner of Beech Hill and inspired the current owners to start farming the walled garden and to embrace the Mrs Skipton’s cooking concepts in the restaurants menus.
Beech Hill head gardener Bob Peaker and his team have carefully restored and brought the walled garden back to life. It know supplies the kitchen with home grown vegetables, fruit and herbs just like it would have done 200 years ago. Head chef Leigh Thursaton designs all his dishes around what is harvested from the garden and the best of local meat, fish and game to give an authentic country house experience.
