Method

    Put potatoes and turnip on to boil in readiness for mashing. They can go into the same pot. Remember to season the water with salt and add 1 of the garlic cloves.

    Sweat off the shallot and garlic in a heavy-based saucepan over medium heat. You needn't colour them, just soften. Add chicken stock and reduce by �. Next add the white wine and again reduce by �. Next add the cream and reduce by �. This is the base for your sauce.

    Now add the turkey and the ham to the white sauce. Heat through until piping hot and pour into a dish. Drain potato and turnip. Mash together with a good knob of butter and season with salt and plenty of black pepper. Spoon on top of the turkey and ham mixture. Bake in the oven at 200C for a further 10 minutes then serve.

  • 500g cold turkey meat, diced
  • 500g cold ham, diced
  • 4 Potatoes
  • 1 Turnip
  • 1 large glass of white wine
  • 500ml cream
  • 2 shallots, finely diced
  • 2 cloves garlic, finely diced
  • 250ml chicken stock
