Strawberry meringue cheese cake

    Melt the butter and add the crushed biscuits.

    Line a 12 inch ring or cheese-cake mould.

    Mix cream cheese and ricotta, lemon and lime and whipped cream with the melted gelatin and then place some on the cheese cake base.

    Add some strawberries, coulis and crushed meringue, then some more filling.
  • 5
    Keep alternating to achieve a 'streaky' effect.

    Leave to set for 2 hours. Then serve topped with meringue and coulis.

    It should look like the one in my photograph. And it will taste just great!

  • 300g digestive biscuits
  • 150g butter, unsalted
  • 400g cream cheese
  • 200g ricotta
  • 1/2 lemon zest
  • 1/2 lime zest
  • 4 leaves softened bronze leaf gelatine
  • 150g cut strawberries
  • 100g strawberry coulis
  • 4 crushed meringue nests. Buy shop-made to save time or make your own if you wish.
